Finally upgrading my desktop... looking for a few recommendations or
tweaks to my base setup.

was planning on an Asus P4C800 Deluxe, with 2.8Ghz, 800FSB processor.
putting it into a Thermaltake Xaser case...

aside from a video card (leaning towards Nvidia chipset), and hard
drives (SATA).. what else should I be sure to add?
I think the case comes with a bunch of fans.. so I'm not sure what
else I need to be sure I get.... extra fans, etc?

If your going to gaming/network, get the P4C800-E with the onboard
IntelPro1000 & CSA

Thats my .02

You really should go for the P4C800-E DeLuxe.
The CSA attached LAN-chip takes a lot of load from your PCI-bus and the
newer revision of the ICH5 (ICH5R) offers SATA-RAID straight from the
southbridge (also doesn´t put load on the PCI-bus as the Promise-chip
does)...
But be sure to have BIOS 1010, not 1011 (much better memory throughput).
