New Email Composition and Automatically putting my email in "From"

What setting controls my email and name automatically showing up in the From
field without me having to type it when I compose a new email?

Whatever you defined in the E-mail field in the account you defined in
Outlook for the account selected (if other than the default) when
composing a new e-mail.

The From field isn't a field you need to ever show or modify, unless you're
using Exchange.
