Is there a good network mapping software that anyone would recomend?
Something that would scavenge our network and create a visual map of the
nodes, servers, routers, switches, etc.? Or am I asking for too much?

In my opinion,...you're asking too much...There have been many attempts, but
I never seen any that I have tried that ever did very well. TNG UniCenter
was one that comes to mind.

Have heard about netcrunch. I think it'll be interesting for you. It scan
the network discovering subnetworks and nodes (servers, routers, switches,
printers and other devices) with services and applications running on it.
Than it creates a network map. The first type of a map represents the
logical network topology, the second present physical topology of network.
If you want to know more check the website
(http://www.adremsoft.com/netcrunch/index.php). There are some materials,
tutaorials, product tour and 30-day full trial demo.

I can't remember if 3Com Network Supervisor will create
maps, but it will discover your network, and it's free.
(or it was the last time I got it - a few months ago)
