Network Design - Fault Tolerance

Hello,
I'm networking a 2-store pizza cafe, that are about 10 miles apart.
The owner wants to provide continuous service during ALL hours of business.
The owner wants his customers to have Internet/web access to his cafe's
menus.
I want to design the network as follows:

If one server should fail in one cafe, the server in the other cafe will
handle the load for both cafe's.
What do I need to have in place?
Where can I find information/resources on how-to do this??

What is your level of expertise in networking?
Will the network between the two be private and a web presence at both
locations or are you trying to just make the web servers available across
the Internet?

The Owner wants to install a POS system.
A POS system with 2 serial port printers at each cafe.
The network is to support a database to track company business:
1. Inventory
2. Top 10 selling products.
3. Customers
4. Weekly report

Cafe menu available on the Internet and local machines.
The servers are not to be web servers only.
I have migrated networks, built peer-to-peer networks and simple "star"
networks.
I want to monitor the network from my office over the Internet.
The network is to be private at both cafe's, but have a web presence at both
locations.

I would say that there are but I'm trying to narrow down exactly how
everything will connect and what will be where before making
recommendations.

When you tell me the network is private but you want to offer a web presence
to customers, that sounds all well and good but tell me HOW you want this to
take place or at least how you envision it.

Ex.
I'll have a lease line between the two stores...
We'll make use of the Internet running a VPN...
Data will be processed at night for consolidation and reporting and the menu
will be for viewing only...
"" and the menu will not only be for viewing but will integrate with the POS
system...
