How would I go about setting up my laptop to have the
ability to log in to a workgroup at home and log in to a
domain at work? can it be done over one NIC or does that
configuration require two NIC's?

Set your system to use DHCP, so it'll be in the same
subnet as your other home systems, then log in locally to
the laptop. When you're at work, log into the domain.
You can also log into the domain at home, using cached
credentials. If your home workgroup uses the same name as
the domain, you'll be all set.
