Need help changing "Open With" setting for Unknown file types

I can't open my email attachments because most are shown
to be an Unknown file type. It's my fault because the last
time the system gave me the "Open With" window. I was
moving fast as I knew what I needed for that attachment.
As I was clicking "ok" I seen I had also checked the box
in front of the "always open with this for this type file"
(or whatever the wording was exactly). NOW every email
attachment with unk.file type gets the Excel Viewer to
open it. THIS IS NOT WORKING!
I do not know how to reverse/undo the setting, can't find
my answer in search or my computer or help. Can't find in
history when it was okay. I need instructions in simple
steps or the location of writen microsoft help on this,
like yesterday! Thank You Very much if You can set me in
the right direction on this.

Possible solution!!

Right click the required file,and in properties, select
the general tab and click the "change" button. this will
allow you to open the file in the correct application -
hope this works!
