Do you mean why does the default program for certain music types change?
There are two reasons:
1) installing a new program that handles a certain type of file, whether
it be music, images or whatever, will almost always take ownership of
that file. Well behaved programs will ask first, but in practice this
rarely happens. There are a variety of ways to transfer ownership back
to a particular program, or you can right-click on the file and use Öpen
With..." to specify a particular program.
2) Some programs are very aggressive about (re-)grabbing ownership of
file types. I would count QuickTime and iTunes (both from Apple) as
some of the worst offenders here. If you open an MP3 in iTunes, it will
grab default ownership for all MP3 files.
