Is it possible to setup windows XP to allow you to select
from multiple domains to login too? If so, how do I do
that?

You don't establish the trust at the client, but at the DC (PDC?).
So you must log in as an Admin on one of the domains, then tell
that domain to trust another domain.

Usually, this is done within one establishment (company or equiv.).
So, this is not a solution if you want to haul a laptop to different
companies that have no reason to trust each other.
