Is there an easy way to tab from one text field to another
on a slide? E.g., from the header text to the body text
field? The tab button doesn't do this - it simply tabs
within the selected box. Thanks for any suggestions.

If you press and hold the CTRL key then press Enter....powerpoint will move
from the title box to the bullet box. If you are already on the bullet box
then powerpoint will create a new slide.

Ctrl-Enter is to used with caution and is only recommended for speed demons

Another method would be to hit Esc after typing in the Title placeholder,
then hit Tab.

The Escape key moves the focus up one level. If you are typing in a text
box, it changes the focus to the whole text box. If you have the whole box
selected, it releases all the selections.

Note: You can also change to shapes and non-placeholders, so make sure the
correct thing is selected before you start typing.
