Monitors won't go to power off all the time

I've tried several things like updating the Nvidia drivers and still it
don't put them in power saving mode.

I don't know what else to do as it's frustrating to come down in the morning
and see that the damn things have been on all night!

Make sure you are not using any screen savers prior to the monitor sleep
mode. Some of these can keep a computer from functioning correctly because
they use too many CPU cycles. The computer never goes to sleep nor does the
monitor sleep.
 
I use blank and that kicks in before the time out for sleep. I thought it
was only the 3d savers that kept things from sleeping?

Should I set sleep before screen saver or just turn saver off and let the
power mode do the saving as well?

Check to see if Windows Media Player is set to allow screen saver during
playback.
