Can someone suggest the name of a good product that will allow me to
monitor all in/out on the network of my NT server and NT workstation.

Try WinDump:

http://windump.polito.it/install/default.htm

It's a version of the UNIX tcpdump utility for Windows. I've never used
WinDump before, but it should do what you want.
