Missing folder in Outlook 2000

We're using Outlook 2000 in an Exchange 2000 environment. I have two users
who have created a folder called "spam" and then setup rules using the
Organize option to move emails from certain people to that folder.
It will work fine for weeks, then suddenly the 'spam' folder will disappear
overnight.

At first I suspected the user was just accidently moving it but we've been
unable to find it under any of her other folders. This has happened to her
and another user more than once.

I've found other references in the newsgroups to the same problem but with
no solutions.

Any suggestions?

Does its disappearance coincide with any automatic processes running on the
server, like mailbox manager?
 
I don't think so. According to the user, the folder was there yesterday but
not today. The only automatic processes that run are the backups using
Veritas Backup Exec 9 and whatever processes that Exchange normally runs. I
haven't setup anything special.
