When you minimize the Outlook windows (and presuming there is no Windows
taskbar button for it), check the Processes tab in Task Manager. Is there
an instance of outlook.exe running? If so, you did not exit Outlook. It is
still running.
You sure the customization for the system notification area (aka tray area)
isn't configured to hide the Outlook tray icon? Did you click on the
chevron at the left of the tray area to see what tray icons were hidden?
