Migrating Outlook Data between profiles

I am migrating user profiles from local non-domain
accounts over to roaming domain accounts, but when I do a
copy profile to the new domain account, it retains the
data file path from the old profile so when the new
username logs on, it can't open the pst files as the file
permissions are set for the old username and path. What
would be the best way to migrate all the users settings
and data (emails, sigs, accounts, etc) from the old
profile to the new profile?

The signature will be hard as it is a physical file, but for the rest you might try
