Migrating from Corporate LAN with Exchange to no LAN

I was on a corporate LAN with Exchange server and VPN connection that I no
longer access. How do I logon to my local computer only but keeping the same
profile information as well as remove Exchange from my outloo. I have already
removed the exchange profile but Outlook is still saying offline.

If you can't connect to the Exchange server any more, what's the point of
keeping the profile?
 
I have deleted the profile however at the bottom Outlook is indicating that
it is offline and when I send emails they do not go right away. I hav to wait
for the time set to send/receive or send receive manually. Is this normal?
