I want data to show in the data table but not plot in a graph. I know it can
be done - I have several examples of it, but I have been unable to figure out
how.

Either go to Insert>Table, or else type the data in excel and copy and
paste it into word (if you do this you will have to change the table
properties to give the cell lines color).
