Message views in Outlook 2003

I'm beginning to wish I hadn't moved from Outlook Express 6 to Outlook
2003...

The new layout is lovely and all, but each message in the middle panel is
wasting a lot of space. At the moment it's in it's default view (for each
message it has the mail icon at the top left, the day and time on the top
right, plus where the message is from on the second line). I've tried
playing around with the views, etc. I've added the Account field to the
view but nothing changes.

I see no reason why I should make the messages display on more than 2 lines,
why can I not get, for example, the account to appear in between the message
icon and the day and time on the top line?

You'll need to change your layout for that. When you set the Reading Pane to
bottom you'll have plent of space to add more columns.
View-> Reading Pane-> Bottom
