Does anyone know how to stop the menu bar from folding up
on itself at the botton of the screen. I had it so I was
able to see every window that was open but I forget how I
did it.
 
I think you are referring to the Taskbar. If so, r-click on the taskbar and
choose properties, un-check the box that says "Auto-hide the taskbar". That
should take care of that problem.

Right click the Taskbar/Properties and uncheck Group similar taskbar
buttons.
