My personal folders and address book have appeared on my accounts list as MAPI type - I'm not understanding why, and wonder if they can be deleted.

Do you want to delete "MAPI type" or the folders? If you aren't using the
personal folders, you can close it to remove it from the list. You need the
address book... and both need mapi to work, so the designation is correct.
As for why they are mapi types - it's how outlook accesses the data stored
in them and other programs need to use mapi to access the data.
