Is it possible to edit emails once they have been sent or received? Would an employeer with access to all email accounts be able to change words or sentences in a past email message?

I found it was really simple to change the messages with Outlook and to save them. Is it possible to determine when an email was changed? I can not find anything that would let me know that the email was saved on a different date then it was sent or received.
