I am trying to figure out a way of creating a macro so that I can clik on a
single button to print an email with a certain printer setting. This is to
try to be a bit greener so that I can print emails. So I want to priint all
my emails double sided.

I can easliey do thi sin word by just creating a macro by using the record
macro function. There does not seem to be a record macro function in outlook
(2003). I tried just cutting and pasting the word macro into a module but
this did not work.

Any sugestions?

The Outlook object model doesn't provide any printer control. You'd have to use a very roundabout method, such as saving the item (see the MailItem.SaveAs method) then opening the saved file in Word and using Word's printer control capability.

You cannot just copy and paste a Word macro into Outlook VBA and expect it to work.
