I received an Outlook e-mail with a word attachment that
needed to be edited. I opened the attachment and started
to edit the document and as I was editing the word doc. I
would hit "SAVE" not "SAVE AS" so that it would save the
changes. When I closed the document and went back to see
if the changes had registered.....I got the original with
no such changes. Is there anyway that I can recover the
document with all the changes? Is there a TEMP file in
outlook that may have these changes?

Possibly since the latest versions of Outlook store attachments in a secure
temp folder that is part of the temporary internet files directory
structure. (You will only be able to get to this directory via a command
prompt is using Windows 2000/XP)

Outlook does save to a temp file. The easiest way to find it is to use the
Search feature on your PC. Search through the entire C: drive if you know
the name of the document. If you don't know the name, you can use the
Advanced feature to search for text within the document or you can simply
search for *.doc which will look for all word documents.

What version of Outlook are you using? I'm surprised it didn't save back to
the email. Are you sure you said OK when you closed down the email because
if you said Cancel then the changes would not have saved back to the
document.
