Our single AD domain has 5 sites that are physically
separated from each other by about 15 miles each. 4 sites
have one DC in them and the last one has 2 DC's here in
the main office. My question is should I configure
replication so that every server replicated with each
server in every direction? Or is that a newbie's
overkill?

I would not make any changes off the bat. I would let the KCC and ISTG
(inter-site topology generator) take care of everything for you. If you
find over time that your environment is growing, I would follow the below
articles to go to a manually generated topology.

224815 The Role of the Inter-Site Topology Generator in Active Directory

244368 How to Optimize Active Directory Replication in a Large Network
http://support.microsoft.com/?id=244368

245610 HOW TO: Disable the Knowledge Consistency Checker Inter-Site Topology

Hope that helps
