Hi
MS recommend adding all user accounts to each PC to allow print and
file sharing to work correctly, is there a way to hide all users other
than the regular user of each machine .
[ instead of being presented with for example, 4 user accounts at
logon , the default user will only see is /her user account and
password field].

This will do what you want on Windows XP and Windows Vista:

Hide user accounts from the Windows XP Welcome screen

Follow the cautions that it gives about editing the registry!
