Is there a way to do logical operations on OL categories? Like for
example find contacts with: "student" & "residing in New York"

Thanks a lot.

You can; choose Find-> Options-> Advanced Find-> tab Advanced. Here you can
select your fields including Categories.

How To Manage General Information For Multiple Contacts

Yes, except that the filter only ANDs different criteria together. You can OR within the same criteria.

Name contains Mary or John
And
Category contains club or sport

The same criteria works in Advanced Find, Views or Automatic Formatting (also in Views). If you have Ol2003 it works in Search folders too.

Simple find (displays in a pane above the messages) uses OR if you enter words separated with commas.
Look for: Mary, John
