Log deletion of files in Windows 2000?

How can I get Windows 2000 to log files when they are deleted? I
found Administrative Tools -> Local Security Policy -> Local
Polciies -> Audit Policy, which has "Audit object access" which
seems like it's what I want, but I can't figure out what it does
and how it works. What would I do to get it to log when a file
was deleted, and hopefully by who/what? And how do I access the
log once it's created?

The audits appear in the Security log in the Event Viewer.
