Locking down folders with Group Policy

I'm trying to find the best way to lock down a user (who
will be using VPN to access the network) to a single
folder on a Server. I figured that Group Policy would be
the best way to do this, but am not sure how to do it
exactly.
I will give the user change/delete/read authority on this
one folder, and one folder only.

If you are not planning to use Terminal Services: you can configure packet
filters on your RRAS server so that only one server in the network is
available for the VPN clients. Then, share a folder on that server and
configure both NTFS and share level permissions for your VPN users.
