Dear @,
I have XP-E but sysinfo (msinfo32.exe) is not installed. Is there any way to
either:
1. Install it afterwards
2. Does it exist another way tolist all the I/O?

You can certainly add msinfo32 to the post-FBA image afterwards as long as you satisfy (add) all the dependencies of the utility
there as well.

There is a bunch of ways to enumerate I/O ports programmatically. Win32 SetupAPI is one example.
More high level, take a look at the WIM scripting (Win32_PortConnector collection). You can find some sample relevant code in here:
