I am having trouble with linking a graph into my active
spreadsheet. I used copy/paste to bring the graph into my
spreadsheet and I notice that the links appear to not
always update. Also, other users have the ability to
alter date formats and view the source of data. Is there
a way to link a graph that shows only the graph (sorta
like a gif)?

Your use of the word 'linking' is a bit confusing.
If you just want a picture of your chart do this:
1)Click on chart to activate it
2)Hold dow the SHIFT key and open the Edit item in Menu; you will see Copy
Picture (only shows if Shift is held when opening menu). Select this
3) The options for Appearance seem to have effect on the picture of a chart;
the options for Size do make a difference (you will want the smaller size).
Click OK
3) Go to where you want the picture and use Paste.\
Another way is to add the Camera tool to the toolbar.
Hope this helps

A chart contains the links to its own data source. If you copy a chart
and paste it elsewhere, it still is linked to the original data. You
would have to select the chart, and use Source Data from the Chart menu
to select new data for the chart to link to.

If your new data is formatted in a worksheet in the same way as the old
worksheet, and the chart is embedded in the old worksheet, I find the
easiest way to accomplish this is to copy the entire sheet (or even open
a copy of the workbook), then copy the new values, and use Paste Special
- Values to put them onto the copy of the worksheet. The chart links to
the old cells (in the copied worksheet), which now contain the new data.
