1. Is it possible to disabled cached profiles from the
server instead of going from workstation to workstation
to disable it?

2. How can I enabled Last Logon from the Server for each
workstation on the network?

There is a policy for cache credentials you can set it to 0
As for Last Logon what are you trying to set

where can i set the policy for cached creditials to 0?

For the Last Logon, I want each workstation to show the
last person that was logged on.

.

For the cached entries:

Computer configuration|Windows Settings|Security Settings|Local
Policies|Security Options|Number of Previous Logons to cache

For the last user that logged on:

Computer configuration|Windows Settings|Security Settings|Local
Policies|Security Options|Do not display last user name in logon screen
Set this value to Disabled, which will show the last user.
Enabled will NOT SHOW the username.
