Although my computer is supposed to work in English english, the correction
to spelling in Vista Mail is in US english. Is there a way of correcting
this?

No. The Windows Mail programming team didn't see any need to provide that.

Windows Mail only supports American English. However, you can add
words to your dictionary for spell checker to use. Just add all of the
UK English words that are not in the American English dictionary as you
go or all at once. Your choice. Go to this link and scroll down a bit
and look at these two sections on how:

That won't help if instead of, say, "colour" he types "color", because it
won't be recognized as a UK typo.
