Lactose free recipies?

We just found out that John is likely Lactose intolerant & has had to cut out sugar as well so I'm on the prowl for recipies :) I can replace sugar (to a certain extent) with sweetner although the stuff we use is powdered so anything that requires 'creaming butter & sugar' is out.
In some situations we can replace milk with soy milk & we have a lactose free margarine so even good recipies that you think could be adapted would be welcome.
We are fine for main meals (John is strictly 'meat & veg' anyway) But are still working on desserts.
Given that John would always put cream on his ice cream because he didn't like dry ice cream, & that his favourite dessert was pavlova or mereings with lots of whipped cream & strawbwrries, you can imagine that this is a... fun adventure :rolleyes:

Ingredients:

Base

  • 1 cup graham wafer crumbs
  • ¼ cup sugar
  • ¼ cup melted lactose-free butter
Filling
  • 500 grams lactose-free cream cheese
  • ½ cup sugar
  • 3 tablespoons flour
  • 4 eggs (separate yolk and white)
  • 1 tsp vanilla
  • 1 cup lactose-free milk
  • 1 tsp gelatin
Directions: 1) Grease a round spring form pan.
2) Mix base ingredients and press mixture into bottom of pan. Set aside.
3) For filling, mix cheese with sugar and flour. Add egg yolks and mix.
4) Add lac-free milk. Mix (low speed on beater). Beat egg white and fold into cheese mixture. Egg white should be stiff.M
5) Pour into crust. Bake at 325° for 1 hour or until golden brown or developed a crack in the upper crust.
6) Before topping the cake, allow to cool for ½ hour then chill in the fridge for 3 hours to set the gelatine. Top and enjoy!

Thanks mucks:D I checked out the site & it's great & John is just going to love the cheese cake recipie :D:D:D I haven't seen any sort of cream cheese substitute in the local shops yet, but the site has some good recipies to try.

From reading up on the site it looks more like John might have an allergy rather than an intolerance. I'll pass that on to John to mention to his Dr when he goes in tonight.
Duno if we'd ever get John down to actually reading all the ingredients when he shops though so I hope the allergy isn't too sensitive. He has little patience with 'illness' of any kind, particularly if it's him that's Ill.
We both developed legionaires disease a couple of winters ago, although he was much sicker than me. When I finally got him in to see the Doctor & the Dr diagnosed it John said point Blank that that No, he didn't have legionaires disease I got up to walk out. Luckily his Doctor knows him pretty well & dropped it to Pneumonia & later told me (he knows I am a researcher) to go home and look up legionella pnuemophila.
When it comes to anything resembling an illness he gets more contrary the worse it is. he started experiencing symptoms of a reaction to dairy well over 2 years ago (I mentioned way back then that he might be lactose intolerant) & it's only now that he's actually decided to test for it & that was completely out of the blue (Nothing to do with me... I know when to keep my mouth shut) He just came home from work the other day with some soy milk & olive-oil butter & cleared all the dairy products out of his refrigerator.

Although it's not been so easy sticking with it as starting it. We're still trying to find replacements for some of 'life's essentials' (eg. cheesecake thank you :) ) But it has made a huge difference already, including some things that I never even tied in with the dairy but which are included in the list of allergy symptoms. Even John's starting to be convinced & that's saying something.
