I would like to use access to create a database of my experiments and link to
common protocols references ( with http link to internet literature), store
image files of protein assays etc.

Well... do!

Handling images in Access requires some special treatment; the program
is very inefficient at storing image data. It's possible to store it
as a BLOB (binary large object) - if Access doesn't know it's an image
- or to store the images in external files.

But it's quite feasible to design your OWN Access database with
tables, fields, and hyperlinks to all of the information that you
describe. This would be an Access *application*, created by the user
or by a hired developer; Microsoft Access is distributed as a toolkit
to build such applications, and (typically) it's not Microsoft's role
to build the application. "Some assembly required", as the box label
should say!
