keeping handle on log file(s) size

As part of my weekly maintenance routine, I maintain a
careful eye on disk space. What I have noticed is that my
log files size {and depending on the server in question}
has increased {servers have three to four application
that run in background}. My question is: How do I
determine which log files can be deleted?

Actually, all logs can be deleted... They are just... erh... "logs" :-).
They are only helping the admin to monitor the server/program. The programs
themself are not using the logs (that's how a normal "log" work).
