In Journal > Customize View > Group By, I've tried to use the TO field (from
All Mail Fields) so that I can group events by type (Entry Type) then by
recipient (TO). But every time I do and accept the changes, it automatically
resets the TO field to REQUIRED ATTENDEES (from Frequently used fields). Why
are my changes not persistant?

The problem is that REQUIRED ATTENDEE (RA) and TO are not the same value.
When grouped by the RA field, most journal entries are grouped as 'none', as
opposed to using the TO field value which (should) have the value of the
e-mail recipient. No?

The field is the same either way, just the display name of the field is
different. You can change it by customizing the field name.
