When I press the standyby button on my computer, it switches off
great. When I turn it back on it comes back where I left it. I guess
this is good because this is how it is meant to work.
I was wondering if, when it came back on, I could make it default to
the logon screen, as I have 3 profiles and I don't want the kids
having access to my profile.
I have Home premium.

Click Start, type powercfg.cpl and press Enter
In the left pane, click "Require a password on wakeup"
Click "Change settings that are currently unavailable"
Click Continue when you see the UAC prompt
Select "Require a password (recommended)
Click "Save changes"
