Is there a way to keep 3 websites separate from one another?

I'm working on 3 websites and can't figure out how to keep them separate.
Everytime I publish a site, I have to click the "do not publish" and it is
just getting irritating. I'm sure it is a very easy solution, but I can't
find it.
 
You have to create 3 separate web sites first...under different web names.
