Is Paper-type now generic?

With Panther Unix (Mac OS X), I am no longer given a
choice of paper type. Previously I could select plain
paper, photo paper, glossy paper, etc.

Is this the new deal, not asking, just printing?

I have an Epson 785EXP

Are you *SURE* you have the model number correct? Epson don't produce a
printer with that number (at least not according to their website).

I think it is EPX, but never mind. Does not relate to the question.

Print drivers come in two stages: The driver unique to the printer,
and the driver in the application. Printing from Photoshop, I
discovered that the PS driver did not correctly echo the settings I
specified in the Printer properties. After considerable wrangling,
Adobe admitted it was their issue, but made not committment to fixing
it.

Without seeing the dialogs, it's hard to be too helpful. When you
select a printer, you should have the opportunity to select
properties. If that does not lead you to the 785 driver, then
something is very wrong

Yes, the Epson 785EPX.

I started taking screen snapshots and finally found it.

It was really buried. In PhotoShop 6, it was an option on the main
print screen. Now (PS7), you have to select "Print with Preview",
then select "Color Management", then select "Print Space: Profile"
then scroll way down (it's not on the opening popup list) to
get to the specific printer and its paper choices.

Weird. I had been printing with "Same as Source", where source
was "Source Space: Document: rSRB IEC61966-2.1". Prints were
not looking that good.
