Is it possible to get a log of jobs printed to a specific printer and the usernames of those people who have printed something ?

Make sure "Audit object access" is enabled in the Audit Policy.

Go to the printer Properties, Security tab, Advanced, Auditing tab,
and add the users you'd like to audit when they use the printer, and
which operations on the printer to audit.

You can also keep all printed documents in the spool by enabling that
option in the Advanced tab of the printer Properties.

I don't suppose there's any way to check what was printed even though we
didn't have the Auditing switched on ?

No, I don't think there would be a record of print jobs anywhere until
after it's configured to save them like that.
