when people contact me I would like them to get an instant message such as
"Thank you for contacting Fitness Ballet I will collect your email shortly
and get back to you as soon as possible" Can this be done with Windows Mail
and how do I do it??

Bad move. If you don't read a message before auto-replying,
how do you know it isn't spam? It's not smart to reply to spam.

Its called an out of office reply.
Go to "Tools - Message rules" to create one.
As for replying to spam, the convenience of the automated out of office
message may offset the inconvenience of spam.

Right. Until such time as anti-spam organizations blacklist you
for what is called 'backscatter'. See
http://en.wikipedia.org/wiki/SpamCop
especially the sentence starting with "Since these addresses may be falsely
used as a return address on spam messages, backscatter caused by these
spam messages (including vacation messages and other auto-replies) can result
in an otherwise innocent server being blacklisted..."

but I couldn't give a hoot about spam & I use no junkmail filters.
Any crap in my mailbox is just ignored.
