In a set up where five computers are networked using Windows XP (and a
Microsoft Exchange Server, if that matters), should we install a multi-player
game on the server or on each indivdiual pc?

Most multi-player games required a licensed CD/DVD inserted on the
individual computers within the LAN. You really need to install the game on
each computer, under its own license.

In addition to what Chris said, even if there wasn't the issue with needing
a disc for each machine to be in the drive when starting up. Any modern
games really need to be installed locally performance over a network,
especially if one was doing multiplayer and all accessing the server would
be pretty bad.
