To add more text to a chart, select the chart, and type the text.
As you type, you'll see the text in the formula bar.
When you press the Enter key, a textbox will appear in the chart.
You can drag this to a new location in the chart, and format it with the
buttons on the formatting toolbar.

Apologies, I should have given more detail, I need to put
a cell reference into the chart title and a text box will
not let me do that.

To add worksheet text to a chart:
1. Click on the chart to select it, or select the chart title
if one exists.
2. Type an equal sign (you'll see it appear in the formula bar)
3. Click on the cell that contains the text for the chart
4. Press the Enter key.
5. Position the textbox where you'd like it in the chart,
and format as desired.

A week or so ago, someone gave an reply, that also answers this. Go to your
chart (if it's on it's own sheet), and in the formula bar, enter "="
(without the " "), and then the address of the cell you want to display. You
can click on the sheet that the cell is on, and select it. When you press
"Enter", an object like a text box appears on your graph, with the contents
of the target cell in it.
