Insert an e-mail as an attachment into a new message

When trying to find the files in the Personal Folder I
created, the "To" is not shown and the result is a very
tedious trawl through e-mails to get the one I need.
The "From" is shown but in all cases it is me.

I have also tried changeing the display properties of the
personal sub-folders but there does not seem to be a link
between this and what is shown when I try create a new
message and then insert a file from said folder.
 
Reconfigure your e-mail settings so that messages are saved in the Sent Items folder. This folder will display the To: field that you're looking for.
 
That works but I'm using the Personal Folder to archive
all my e-mails on my hard drive rather than using the
network. Is there no other way to see the "To" fields
other than in the Sent Items folder.

What version of Outlook are you using? You should be able to add a "To"
field to the list of fields...(i.e. from, subject, received, size). In
Outlook 2002, you can do this by right clicking below the field bar *but not
on an email* and selecting "show fields" from the drop down menu or
View/Current View... click the "Fields" button while clicked on the folder
you wish to add to. Under "Available fields" click on "To", you can either
click the "Add" button and use the "move up/move down" or you can drag and
drop from the left to the right and put it where you want it.

Sorry, I didn't know that you were using Outlook with an Exchange server. I have no experience in this area.
