In Access the Date Updated entry 14/04/05 returns as 05/04/2014.

While creating a new database in Access 2003 and in the coloumn "Date
Updated" of the new record when I type the date 14th April 2005 the date
returns as 5th April 2014. The format is dd/mm/yy
This does not happen to for eg. 12th April 2005 entry however.
 
It looks to me like you've got the wrong format in the Control Panel.
Don't forget that Access takes its formatting from the Windows Control
Panel - date, time, numbers, currency, etc.
Go to the Control Panel -> Regional and Language Options and Customize your
short date format to dd/mm/yy
The fact that it works with some dates is probably because you're entering a
2-digit year.
My recommendation is to always go with the ANSI format: yyyy-mm-dd
