Identify last log on by MAC address

We have a user that recently had his laptop stolen and we're wondering if
there is a way to determine the last time that laptop accessed the network by
using its MAC address. Can this be done?

Only if you set up some logging process in advance.
 
In theory you might be able to glean clues from a DHCP server (if you have
one) or some other logging means, but as Pegasus said, it's too late now if
you didn't already have something set up to capture logins.
