How to set page number format such as 001?

Add the following formatting switch inside the closing field delimiter

\# "000"

so that it looks like:

{ PAGE \# "000" }

Use Alt+F9 to toggle on and off the display of the field codes. Ctrl+F9 to
insert the field delimiters { } if you are entering the whole thing from the
keyboard.

But note that a table of contents will reflect the "Number format"
chosen in the Page Number Format dialog box.

You insert the field delimiters using Ctrl+F9. You display the field code of
an existing field (such as PAGE) with Alt+F9.
