Assumming that you put it in a seperate folder, one way is to:

View hidden files,
use notepad to edit boot.txt

boot.txt is the file that shows your boot choices and the default to use.
Change the default entry to match your W2K.AS one, save boot.txt and try it.

If this works, you can then go in to boot.txt, remove the 2003 entry, delete
the 2003 folder and essentially be done.

If you REALLY want, you can clean up the boot sector but it is not really
worth the effort.

Background: I mistakenly installed Windows 2003 into a
dual-boot configuration instead of upgrading on-top-of the
current W2K AS system.

Question: How do I "un-do" this situation?... what are the
steps to remove Window 2003 Server and reset system to
only boot to W2K AS?

Delete the WIN2K3 line from boot.ini, make sure that your default boot is
your WIN2K syetm then delete the WIN2K3 folder.
