How to protect a form and allow users to fill in blank?

I have a document/Contract that should go out via e-mail. I want to protect
the document from being edited (I know how to do this) but how do I allow
users to be able to fill out blanks at the same time?

What you are talking about is what Word calls an "online form." Check this
in help. For more about online forms, follow the links at

Chapman's series of articles. You may also want to look at
http://www.word.mvps.org/FAQs/TblsFldsFms/LinesInForms.htm.

However, the protection this provides is rudimentary. If someone knows how,
it takes less than a minute to edit the protected area. The basic rule is
that if someone can read it, they can copy it. If they can copy it, they can
edit it.
