how to make scanned files

I've got a 15 page document I'd like to scan into a file or files, and be
able to send via email attachment.

What is the best media to do this through? I'm afraid I'm going to hear I
should make a .pdf file. I can do that--no problem. I have Adobe and a HP
scanner. Matter of fact, the document is already in a .pdf file with two
text pages on one adobe page.

However, I don't like the way the adobe file ends up with two text pages on
one adobe page, side by side. And, the text is very small. Yes, you can
enlarge the text, and select which of the two pages you read. However, you
finish at the bottom of one page, and have to then shift way over and go up
to the top of the next one.

I'd like to have each text page be a single image. I know this is probably
going to take up so much file space that it's not feasible to do it.

Thoughts and ideas appreciated.

Change the view in Adobe reader to continuous. View>Page Layout>Continuous.
