I just put a fax/printer on our network. What do I need to do on the server
to make this IP address static for that machine?

Look in the manual for the fax/printer for directions on how to set a static
IP address on that fax/printer.

Open the properties of the LAN>properties of the TCP/IP, select Use following IP address. Assign IP, subnet, default gateway and DNS manually.

I already thought of that but no help. I was asking about the Server DHCP
information. I know this is how you set aside an address for any machine on
the network but can't remember how.

You have to set aside what Microsoft calls a reservation, bascially you put
the MAC address of the printer in and tell it which ip address you want it
to have and it will always have that ip address
